Why sourdough bread?

Well, why not? Everything starts from bread. Humankind started out with bread, conversations start with bread, it’s the first thing that enters every dinner table in the home or in a 3* Michelin restaurant. This is what excited us most, how something so simple and ‘everyday’ can be so fundamental. Making sourdough daily at Honest Bread, Nicosia, is intense, interesting and challenging, as each day you discover something new.

2015

Our sourdough story starts

Driven by his passion and curiosity for all things sourdough, George started baking this unique and intricate bread as a hobby in 2015, and quickly became obsessed. From reading books, attending masterclasses, to travelling and tasting sourdough from all around the world.

2015

5* hotels,
5* sourdough, London

When working at 5* hotels in London, George grew to be a sourdough connoisseur and baker, taking his sourdough starter with him everywhere.

2016

Sourdough took me to Seville, Spain

Fuelled by his love for sourdough and his starter, George went to work as a baking chef in Seville. Hoping that one day he would return to Cyprus to open his own bakery. (Spoiler: He’ll open Honest Bread, Nicosia, just a few years after this!)

2017

Sourdough took me to Hampshire, UK

Presented with the opportunity to return to the UK and work in a 5* hotel kitchen, George continued to improve his skills as a chef in Hampshire and perfect his sourdough technique.

2019

Sourdough took me to Nicosia, Cyprus

George finally got to make his return back to Cyprus in 2019, setting up base as a one man show in a 40 sqm kitchen at Aristofanous 25, Nicosia. For a year and a half, friends and family were called in to help. In particular, Danae, became a No. 1 supporter, helping George through countless hours and sleepless nights, ensuring the love for sourdough never faded.

That brings us to today. Our artisan bakery sits on Athalassas 146B, a lively main road that attracts locals and tourists alike. Serving sourdough and other baked delights, we’re proud to be Honest bakers, Honest sourdough enthusiasts and Honest Bread, in Nicosia.

Where will bread take us next…

Maybe to the moon or to Mars? We Honestly don’t know, but one thing is for sure, sourdough will remain in our hearts (and our ovens) forever.
